Scientists Turn Plastic Waste Into Protein-Rich Cookies
Researchers at Southern Illinois University Carbondale use modified yeast to convert PET plastic and plant waste into proteins, vitamins, and flavorings for cookies called µBites. The project was created for NASA's Deep Space Food Challenge for long-duration spaceflight and could aid in disaster zones.

- µBites cookies are 3D-printed, taste tests not yet approved
- Yeast produces vanillin and beta-carotene from waste
- Project funded by NASA Deep Space Food Challenge and NSF CAREER grant
